The control followed similar process trends as in batches IIII but without enzyme treatment. The following analyses were carried out for the recovered juice. The percentage juice recovery and Total Phenolics () were estimated for each batch after dual extraction, while o Brix, Titratable Acidity (), turbidity and viscosity were done for each step of extraction.
